The Little Things

I am not a proponent of portion size or small servings generally but there are always exceptions such as these little morsels of sweet, buttery goodness. These little cakes are not as dense as a friand nor are they as spongy as a muffin. Rather they are moist and studded with bites of melted chocolate and chunks of moist banana.

The sizing choice was twofold. Firstly while this mixture would work equally well as a larger cake today I was looking for picnic food and things in cupcake cases are too hard to pass up. Secondly served as a smaller cake you get a lovely golden exterior with a moist crumb inside melting into pieces of warm chocolate and banana. As you reach for your second just remember they’re so small you have no excuse not to have another one!

Banana and Chocolate Babycakes

(makes 10-12 depending on the size of your cases)

100g/3.5 oz softened butter
1/3 cup brown sugar
1 tbsp white sugar
1 tsp baking soda
1 egg
1/3 cup milk
1/4 cup yoghurt
1/2 cup almond meal
1/3 cup plain flour
1 very roughly mashed banana
1/4 cup dark chocolate chopped

Pre-heat your oven 180C/350F. Cream together the butter and sugars. Add in the egg and mix well. Pour in the milk and yoghurt and stir until smooth. Spoon in the mashed banana and combine. Add in the almond meal and flour and stir through. Finally sprinkle over the chocolate bits and give one final mix. Place spoonfuls of batter into cupcake cases and bake in the oven for 12-15 minutes.

The rest of the bounty
While I am perfectly happy picnicking on these alone there will of course be some obligatory savoury items. A tub of marinated olives and these sandwiches from a Two Fat Ladies recipe make up the rest of the picnic fare.

You'd maybe only need an excuse to eat them all... then again. Sound delicious.

I don't know if I'd be strong enough to have only 1 or 2 of these, Truffle... ;)
Banana and chocolate are so delicious together!

Banana and chocolate are good combination. Clever portion-control idea! Again, great photos - those sandwiches are shot beautifully.

By the way, I've tagged you for a meme. No pressure...

Your muffin has a wedgie!!

Sorry...I couldn't resist ;-) But dang, chocolate and banana is a winning combination, only topped by chocolate, banana AND peanut butter :-)

Truffle, these are the things I baked most frequently. I like "baby" portion - easy to carry around and no mess! :)

Half the size, so you can have twice as many - that's my kind of cupcake!
